When there are so few ingredients and such little work involved, can you even call something like this a recipe?
Why are Sheet Pan S’mores the book-inspired recipe for Wilderness Reform?
Wilderness Reform is all about the outdoor camping, and what’s outdoor camping without s’mores?
Um, sacrilege. That’s what.
S’mores are made at every campfire the boys gather around in Wilderness Reform – or, at least, the campfires before the shit starts to hit the fan. I figured these tasty treats would be a great book-inspired recipe for August, when we’re all trying to glom on to the last little glimmers of summer fun with BBQs and outdoor gatherings.
With one minor revision: I’m not cooking these s’mores al fresco. I’m making them in the oven.
What are Sheet Pan S’mores?
Sheet Pan S’mores are a way to make a big batch of ooey, gooey, chocolatey s’mores all at once.
The recipe for this dessert is so simple. You make a large graham cracker crust on a sheet pan and spread melted chocolate on top. Then, you plop marshmallows to your heart’s content over the chocolate. Finally, you shove everything under the broiler for a few minutes.
You get all the flavors, textures, and sugary goodness of s’mores without having to keep a fire going in sub-optimal camping weather, or worry about kids using their toasting sticks as weapons.
No one’s standing near an open flame – except the responsible adult making these sheet pan s’mores – and everyone gets to eat their s’mores at the same time.
This dessert is especially useful when your outdoor plans get rained out and you still want to give people the full summer BBQ experiences.
How do you eat Sheet Pan S’mores?
The best way to eat Sheet Pan S’mores is to plunk the sheet pan down on your picnic table, give everyone a spoon, and tell ‘em to tuck in. Yep, that’s right – eat these babies right out of the pan while they’re still ooey and gooey.
Say it with me! Communal S’mores. (Because let’s all pretend that Covid didn’t happen. *giddy laughter*)
If you can’t bring yourself to get that fast and loose with your party guests (because Covid did happen), just scoop hearty pieces into bowls or ramekins and serve your s’mores that way.
For an extra hit of decadence, drizzle everything with chocolate sauce, or nestle some ice cream in the bowl before you adding a s’mores square.
Once the sheet pan s’mores cool to room temperature, the crust will have solidified enough that you could pick them up and fold them over to be eaten sandwich-style, like a classic s’mores.
These s’mores are messy.
A word of warning: Sheet Pan S’mores are messyAF. These are not sheet pan s’mores bars. The graham cracker crust is pretty thin and crumbly, especially when it’s fresh out of the broiler.
My husband is a huge s’mores fan, and he tells me that s’mores are supposed to be messy. Well, can I just say that this is a job well done?
Even if you do your best to contain the mess, you will probably fail. Chocolate will get everywhere. Crumbs will get everywhere. Marshmallow will get everywhere.
You know what else will get everywhere? Smiles. And laughter. And happiness. Embrace it, people, along with the last days of summer.

Serve Sheet Pan S’mores after a summer BBQ feast of Firehouse Chicken Wings, Smoked Gouda Burgers with Onion Jam, or Grilled Balsamic Rosemary Steak. You can’t go wrong with refreshing summer side dishes like corn on the cob, Chickpea Shepherd’s Salad, or Lobster Tortellini Salad. A glass of Mint Iced Tea or Pineapple Agua Fresca will help you beat the heat.
Sheet Pan S'mores
Ingredients
- 18 (at least) large marshmallows
- 1-2 cups (at least) mini marshmallows
- 1/4 cup unsalted butter, melted
- pinch of salt
- 1 whole egg
- 1 egg white
- 1 14.4-oz box of graham crackers
- 16 oz chocolate*
Instructions
PREP INSTRUCTIONS
- Microwave the butter in a small bowl for 30-second intervals, stirring in between, until completely melted and smooth. Set aside to cool slightly.
- Break the chocolate up into pieces and microwave in a medium bowl for 30-second intervals, stirring in between, until completely melted and smooth. Set aside to cool slightly.
- Separate your egg white (discard or save your egg yolk for another use). Add the egg white and the whole egg to a small bowl, then whisk together lightly with a fork. Set aside.
- Line a 13x18 inch sheet pan/cookie sheet** with parchment paper. Set aside.
- Preheat your oven to 350F.
BAKING INSTRUCTIONS
- Break up the graham crackers into medium-sized pieces and place in the bowl of a large food processor. Pulse until the crackers are reduced to fine crumbs. You may need to do this in two batches, depending on the size of your food processor.
- Pour the graham cracker crumbs into a large bowl. Use a spatula or wooden spoon to mix in the melted butter, salt, and the egg mixture. Stir until the crumbs are moistened and all ingredients are completely blended.
- Press the moistened graham cracker crumbs into a single layer on the prepared baking sheet. Bake at 350F for 8-10 minutes, or until crust is set and golden brown.
- Remove the sheet pan from the oven and immediately pour the melted chocolate on top of the crust. Use an offset spatula to carefully smooth the chocolate into a single, even layer over the crust, making sure you get edge-to-edge coverage.
- Freeze the sheet pan for 30 minutes, or until the crust and chocolate are completely cool. Alternatively, you could refrigerate overnight if you are making the s'mores in advance.
- Right before you’re ready to serve the s’mores, remove the sheet pan from the fridge/freezer. Place the large marshmallows along top of the chocolate layer (in whatever pattern you want!).
- Move your oven rack to the middle of the oven, then turn the Broiler on HIGH.
- Place the sheet pan vertically into the oven on the middle rack and close the door. Broil on HIGH for 1-2 minutes, keeping watch the entire time, until marshmallows are light brown. DO NOT WALK AWAY. I REPEAT, DO NOT. Marshmallows burn very easily.
- Remove sheet pan and sprinkle the mini marshmallows over the s’mores. Replace sheet pan in oven and broil on HIGH for another minute, or until all marshmallows are toasted to your liking.
- Serve Sheet Pan S’mores directly from the sheet pan or scoop into bowls. Drizzle with chocolate syrup if desired. At room temperature, you can slice the s’mores into pieces and eat them sandwich style.
